Baby Poop Soup




I came up with this recipe years ago when I was trying to lose weight. It's high in veggies, low in carbs and calories, and very satisfying. It makes an excellent cold summer soup or hot winter soup. I called it Baby Poop Soup because the only other place I ever saw this shade of green was my daughter's diaper.
Use canned veggies, fresh just don't work well in this:

One can peas and carrots

Three cans Veg-All 

One can green beans

One can spinach

Open the cans and dump them, liquid and all, into the pot. Add garlic powder, onion powder, whatever herbs you enjoy, salt, and pepper. Bring to a boil. Remove from heat. Puree with a stick blender, or if you do not have one, dump it into the regular blender, a cup or so at a time and puree.

Serve with nice crusty bread. 

Variations: 

  • Chop some leftover cooked chicken and toss it into a bowl for a great veggie chicken soup.
  • Cube some tofu and add to a bowl of soup.
  • Put a couple of slices of cheddar cheese or a bunch of grated cheese into a bowl of HOT soup, stir as it melts into the soup. MMMMMM!
  • A spoonful of sour cream stirred in is sublime.
  • How about some avocado slices floating in your soup?
  • Bacon bits, cooked shrimp, smoked sausage or kielbasa, cooked and drained ground beef, you can add just about any cooked meat.
  • Get creative with the add-ins.
